Even though its officially May, in Texas, and normally fairly warm, I was craving soup the other day. Blame all of the rain that we've had lately for the cooler temperatures. Blame my allergies which have left me wearing glasses for the better part of the week. Blame whatever. Nevermind the fact that I had bought bulk motzerella cheese from Costco and needed something to use it in.
So yesterday, I whipped up (seriously, soup from scratch in under 20 minutes) a batch of this for dinner last night:
Caprese Tomato Soup.
Delish.
Even the husband loved it.
And I counted down the minutes until lunch today so I could have another serving.
