It's amazing. This post may actually be drafted ahead of time and posted first thing on Monday. Why is this important? Because the husband and I have been talking about the need to have a day of "rest"...church, family time, relaxation, etc. each week. And normally, its pretty close to impossible.
Sunday's inevitably fill up with random tasks and errands, which result in us running from one place to another and being more tired than we started the day.
Thus, the goal now is the grocery shop and do our Costco run on Saturday, not Sunday, which means menu planning must be done on Friday. Not Sunday morning.
Gold star for me this week. As I actually did it. Here's what we are planning on eating this week:
Sunday
Quinoa Chicken Parmasean and Zuchini
A hold over from last week...after a little mishap on Tuesday, we ended up getting Chick-fil-a for dinner and everything got pushed back one night.

Monday
Tuesday
Not sure how well this will be received, but I've been craving pasta as of late...and trying to avoid processed carbs in an effort to lose the baby weight. will pair it with my turkey meatballs with zuchinni and carrots.
Thursday
Tilapia and Veggies
Yes, we had this a few weeks ago, but not only was it SUPER QUICK & EASY, but Little Miss ate 3 pieces of Tilapia. Easy to see why its become a staple in our dinner rotation!

Thanks for sharing your menu! My husband likes tortilla soup so I will put this on a future menu!
